The Table

We cook the food our grandmothers kept in their hands — the sour, the smoke, the almost-too-ripe and set it down slowly, one course at a time.

The Chef

Chef & co-owner

Pampanga-born, Marco spent ten years in Manila and Copenhagen kitchens before coming home to cook from memory: his lola’s kinilaw, sour soups eaten after rain, cacao roasted on a clay stove.

At Hiraya he keeps the techniques he trained for and the flavors he was raised on — and refuses to choose between them.

“Nostalgia is an ingredient. We weigh it like salt.”

The Room
